Dinner: Inspired By Pajamas- “Taco Pizza.”

When you have a two year old, you often find yourself coming up with weird or slightly odd phrases. Mac ‘n cheese in our house is now called, “Mac and cheese pasta.” The “Night Time Song” is actually “All My Loving” by the Beatles. Additionally, the silly pajamas that are printed with random food have been deemed the “Taco Pizza PJs.”

These PJs are a favorite and worn all the time. But, I was about 18 weeks pregnant and it happened to be Taco Pizza PJ night when I couldn’t help but think, “Yep. Taco Pizza sounds delicious.” A pregnancy craving mash up that actually sounded good to my non-pregnant family members. Unlike my recent Tootsie Roll craving (which isn’t even a mash up, but gets a lot of hate).

So, we went with it. For the record, I know this isn’t a new idea. In fact it’s been a favorite of mine for a while, but I had forgotten about it. Also, as I told people about, it seemed like a new idea to them. So here it is (or at least one version we love)!

My Findings:

EXACTLY what I was craving. I replaced the refried beans with black beans because that’s what we like better. I also used a regular crust, but would recommend a thin crust for next time for a crunchier bite.

Turner’s Findings:

It was quick for them to make & eat, which means I had more attention!!

Smooch’s Findings:

Really delicious, especially with the addition of hot sauce to my slices.

Smooch 2.0’s Findings:

I usually don’t like pizza, but I LOVED this. Probably because tacos are my favorite.


Dinner inspiration can be difficult, especially when you feel like you cook the same thing all the time or your kid/spouse will only eat a few things. Don’t be afraid to mix it up! Or find dinner ideas in weird places- like a pair of pajamas.

This week I want to introduce to you Brittany. She is one of my oldest and dearest friends. We met in first grade, ended up living in the same neighborhood for a large portion of our childhood, and now we thankfully live less than 10 miles from each other in the beautiful city of Atlanta. She’s been there for it all!

In true Turner & Smooch 2.0 fashion- Britt has an adorable (yet feisty) dog, Riley, — who actually has his own Instagram @roamingwithriley– and her husband (as of a few months ago!), and they also enjoy cooking delicious meals!

However, this week, Britt has a special feature to share with anyone local or visiting Atlanta. You’ll want to listen up, because I can promise you, when it comes to the BEST spots in Atlanta, Brittany is my go-to person. She always gives the best recommendations & knows the latest and greatest spots!

The Atlanta Margarita Crawl

Let me first start out by saying that I am in no way qualified with some fancy certificate to rank food and beverages. In fact, none of the people that came along on this adventure are qualified with special titles or have taken training on how to spot different tastes within consumed edible dishes. We however, were armed with our passion for a good quality margarita, and thirst for a well put together beverage to accompany us when eating Mexican food, or to keep us company on a hot summer day.This adventure began with the on-going debate that seems to always creep up in conversation when different personalities come in contact. Mostly my now husband and my friends. The debate titled: “Best Margarita in Atlanta.” I had grown tired of listening to the bickering, arguing, and hateful things being said about such an enjoyable drink! These debates would usually happen while we’re already intoxicated, and quite frankly, I just wanted to enjoy my then drink and not have to listen about how another drink was a thousand times better. Thus, the Margarita Crawl idea was birthed.

Coming into this, it is worth noting that Cory, my husband, was confident that La Parilla had the best margarita in town. My friends Tori and Katie were equally confident that Bartaco had the best. Me on the other hand, I was excited to let this argument finally be put to rest while enjoying lovely drinks. I did not care who was pouring them as long as they were good. In order to make sure we were equally grading the margaritas, we came up with criteria that made a good drink. Because honestly, a bunch of slightly tipsy and stubborn adults trying margaritas and convincing each other that one was better than the other would not solve anything.

The Criteria:

Now, please know that we DID NOT order the house margaritas at each of these places. We decided that margarita mix is not the best judge of a margarita and therefore we ordered the skinny margarita at each stop in hopes that this would give us a good feel for their bartenders, the freshness of their ingredients, and also not completely ruin our summer bods.

The first category was presentation. Now this may not seem like it matters because really, does presentation effect taste? YES! Your initial impression of said margarita can be tainted by how it’s presented, therefore you go into your first sip with caution or excitement. So yes, this is a category. This included how it looked, ice cubes, glass, etc. This category can get up to 5 points, just like all the others.

The second was price. Simply put: is the price worth it? This can be interpreted how ever the scorer chose. Was the margarita a good bang for your money? Was it too expensive for how crappy it tasted? Was the margarita worth the high price? A marg could get up to 5 points on this as well.

The last category was portion. Now this is the taste! Portion meaning tequila to sweetness/sourness ratio. Was it too sweet, too sour, too much tequila (if there ever could be such a thing) etc. And the marg could earn up to 5 points for this.

The Scoring:
On our margarita crawl we had 7 people scoring. So when all is said and done, each marg could earn up to 105 points. So just keep this in mind when looking at the results below. If you can’t figure it out… just think of it like a 100 point scale in school. It’s basically that (100-90 A, 89-80 B, 79-74 C, 73-70 D, 69 and below is a big fat FAIL)

Results:

Minero – 44
This sits in Ponce City Market, which is a super cool place if you haven’t been. Awesome place that also has outdoor seating and even if you don’t like their food, you could take your marg and walk around with it and eat somewhere else or shop if you’d like. This idea is great in theory, however you’d be walking around with basically an orange juice with tequila. There isn’t a specific “skinny” margarita on the menu, but that is what we ordered and that is what we were told we got. Normally I would say, “well, it’s just not for me.” However, this margarita was not for any of the people in our group of 7 so that’s saying something. Plus it was the most expensive margarita of the day at $10. I would say.. NOT worth it. But, if you like tequila sunrises, here you go!

Superica – 59
Superica is a great Mexican restaurant, often packed with people from Krog street market that are looking for a restaurant feel and not a market style, find your own seat, thing. Our margs were served in the standard glass that’s like a mini version of a glass cup you’d get at Chili’s (you guys know what I’m talking about with the indentions on the bottom half and smooth towards the lip). Anyways, it comes with a lime which is great, but it was just okay. It’s a little sour… to the point where you know it’s sour and probably say it out loud when you take your first sip just like the rest of us did. But hey, it’s a marg and it does the trick if that’s what you’re in to.

La Parilla – 68
Now you can just imagine Cory being infuriated with the fact that his precious La Parilla came in third. However, he did in fact LOVE the winner so he is okay I promise. Their skinny margarita is served in a great glass that fans outward starting from the base. There’s a lot of ice and of course a lime which is great. You definitely taste the tequila and it’s worth the $8.99 because chances are you are not going to need 5 of these bad boys. Plus, the food is your typical Mexican place and the service is always great too.

Bartaco – 80
Cory was okay with his margarita not winning. Tori and Katie on the other hand… not so much. Although they love the winner, they still love Bartaco’s margarita. It is served in a very modern straight glass, with a lime, and with VERY large ice cubes. It has a fizz to it so I assume it is mixed with some club soda. It adds just a hint of their own signature taste to it which compliments the tequila and lime. You really cannot beat the atmosphere and the cheap tacos that you can get on the side too. Out of all the categories, it lost the most points on price. It’s a little steep at $9.75 and it was not even 12 oz. Try and get a carafe of these things at they’re nearly $50. It is however an AWESOME margarita and a great atmosphere.

The Winner – Agave – 94
I cannot stop talking about this place. We honestly didn’t even have it on the list until I did a little digging of my own of the best margaritas in Atlanta. I’m glad I did, because oh. My. Heavens. Best margarita I have ever had. The rest of the group was on board with this except for Katie (who may or may not have still been a little sour from the Superica margarita that was drank right before agave). It is sweet, tequila-y, lime-y, agave-y… yes all those words I just made up, all in one. They make their own agave and put it into their margaritas and boy you can tell. The bartenders, servers, and quaint restaurant is not one you want to pass up or rule out when looking for the perfect margarita. I guarantee you will not be disappointed. It’s also only $9.50 (cheaper than Bartaco) and SO worth every cent.

So the ending question: Will another Margarita Crawl happen? Yes, probably. Agave will be included in our next planned adventure and we will score again using the same criteria. Honestly, I’d rather just spend the rest of my days sipping on these delicious margaritas in cabbagetown for the rest of my life in Atlanta. But alas, I know the argument will arise sooner or later when Cory or one of my friends venture out into the unknown and find another margarita that they deem fit to put against Agave’s golden nectar… but until then, enjoy your summer and I hope it is accompanied by an amazing fresh and cold beverage. Comfort Food

This weekend it snowed. Unexpectedly and a lot. We spent all day Saturday playing in the snow, drinking hot chocolate, and watching Christmas movies. It. Was. Fantastic.

As Sunday rolled around, and it was time to plan this week’s meals, all I was craving was hearty comfort foods. Each night this week I’ve planned a different dinner that compliments this wintery weather.

First up- Shepherd’s Pie < click for link to recipe

While this meal isn’t my usual “quick and easy” type of recipe, it was still manageable on a weeknight. The extra attention it needed was all worth it when it came out of the oven. It was filling and flavorful. The perfect meal after a weekend of snow.

My Findings:

Somehow I ended up with too much liquid in the pie. It was still really good, but I had to use a slotted spoon to serve. My guess would be that it only needs 2/3 of the broth it calls for.

Turner’s Findings:

Smooch2.0 has recently discovered how to open my food and feed me. He makes a mess, and I get extras. It’s wonderful.

Smooch’s Findings:

“Of course it’s great- I made the mashed potatoes, and I’m the Master of Mashed Potatoes.” (It really is true. Whenever we have mashed potatoes, he’s makes them, because they’re perfect. Every time.)

Smooch2.0’s Findings:

It was so good that I ditched my fork and shoveled it straight in my mouth using my hands. I ended up wearing a lot of it, but I really loved it.

Pandora, Pasta, and a Little Rosé

When I got home this afternoon it was cold and rainy.

Typically this isn’t the type of weather someone gets excited about, but for the first time this season, it was starting to feel like Christmas. I was so excited about it that Smooch2.0 and I made a pit stop on the way home at our local coffee shop for a hot chocolate.

I love Christmas.

As soon as we got home, I plugged in the Christmas lights, politely passive aggressively asked my husband to go to the store for wine, turned on our favorite Pandora station, and started on dinner.

This meal was so easy that I was finished making it before my husband got back from the store. Seriously. Thirty minutes all together and it was done. The perfect idea for a weeknight meal.

My Findings:

At the bottom of the recipe it says if you’re putting it over pasta to double the sauce, and I couldn’t agree more. Once I did this it was the perfect amount of sauce for the noodles. Also, I opted for penne pasta (so our little guy could pick it up easily), but I think it would be great with any sauce-catching pasta!

Turner’s Findings:

It’s delicious. I know because I stole a bite off of Smooch2.0’s plate while it was cooling.

Smooch’s Findings:

“You gave me too much, I’m just going to have one more bite and then I’m done… okay maybe two more bites…”

Smooch2.0:

Somehow managed to avoid all the chicken and only eat all pasta. On the bright side, he ate every bite of pasta AND he ate all the spinach.

Spaghetti Squash. It’s What’s For Dinner.

I love carbs. Bread. Pasta. Pizza. Beer. I love it all. It is by far is my favorite category when it comes to food. I often forgo dessert and opt for the extra piece of bread instead. But let’s be real. Most desserts are carb based, so I love those, too. You get the picture. I love carbs.

With that being said, we all know that carbs don’t always love us back. Sometimes we have to break-up with carbs for a night or two. Some people even go months or years without carbs. I will never be that person. I did however cut carbs for a night, and I feel pretty proud.

We made spaghetti squash with a tomato based meat sauce. The meat sauce was honestly just a jar of spaghetti sauce, onions, garlic, spinach (finely chopped and hidden for Smooch2.0), and sausage. The secret is with the spaghetti squash.

There are a few tricks for cooking a perfect spaghetti squash. The first trick– don’t think it’s going to magically taste like authentic spaghetti.

I have found several blogs that say if you cook it right “it takes like real spaghetti.”

Lies.

Sure, it acts as a great base that you can top with all the right things to get a very authentic spaghetti vibe. However, the spaghetti squash itself has much more of a crunch and less of a flavor. Remember- highly critical carb loyalist here.

I will say, when cooked correctly, spaghetti squash is really tasty and gives you the satisfaction of eating a heavy, comfort food meal without all the guilt. Perfect for this time of year.

More about cooking a spaghetti squash:

  • You want to roast it. Don’t steam it.
  • Make sure you cut it in half, clean out the squash, and pat it dry.
  • Drizzle with salt, pepper, and extra virgin olive oil– generously.
  • Lay on a pan face up
  • Cook on a high temp (425) for a long time (45-50 minutes).
  • Shred with a fork and add you favorite sauce (or serve as a side with more olive oil)

My Findings:

It really can be that easy, and it really is delicious. It has also become a frequent meal in this carb loving family.

Turner’s Findings:

Healthy meals inspire health lives which lead to more walks.

Smooch’s Findings:

“Spaghetti isn’t my favorite, but this is pretty good.”

Smooch2.0 Findings:

I almost didn’t realize that I was eating 2+ servings of vegetables because it was so good, but then I did. Right at the end I noticed something green. Then I was done.

Twist on Taco Tuesday (on a Monday)

Each Sunday I sit down with a cup of coffee and meal plan for the week. I make a grocery list, write the plan on the board, and then head to the store. It’s easily one of my favorite parts of the week.

Sounds picture perfect, right? Don’t be fooled. At least once (usually twice) a week, our dinner plans don’t stick. That grilled chicken salad I planned when I was feeling optimistically healthy quickly turns into Dominos Pizza after a long day. Or maybe I forgot to set out the meat to thaw the night before, so we are stuck scrambling at the last minute.

Needless to say, it’s Monday and our plans this week have already switched. Our Taco Tuesday was moved to Monday, and you know what? It was complete okay by me.

It was delicious, made in a crockpot, and my toddler couldn’t get enough. That’s a win in my book.

My Findings:

The blogger recommends setting the crockpot to “keep warm” if you’re leaving all day, and I completely agree. However, when you get home, switch the crockpot to low while you brown the meat. This will allow the temperature to rise perfectly. Also, be sure to get low-sodium on all the canned items. I can see how quickly this could become too salty.

Turner’s Findings:

Usually Smooch2.0 throws over whatever he doesn’t want, and I get to eat the reject food. Today I got nothing. Zip. Zero. He ate it all.

Smooch’s Findings:

“You can’t forget the avocado on top. It really takes this already delicious meal to the next level.”

Smooch 2.0:

Ate all of it. Except the tomatoes. Also, mom left out most of the broth with my bowl, so I could feed myself all the chunky pieces without making a (huge) mess.

Little Italy

One day, I will go to Italy. It has been number one on my travel bucket list for as long as I can remember. I love the food, history, and culture.

Going to Italy is most likely years away for us, so for now we will make do with what we have here. Unfortunately, we have yet to find an Italian restaurant near us that we love. We tried one a few weeks ago, and it was a bust.

Since that terrible outing, I have been craving a simple Italian meal. I came across a chicken parmesan recipe this week that looked to be easy, simple, and delicious. The best part? It was just that.

This Oven Baked Chicken Parmesan recipe was exactly what I needed to satisfy my Italian craving. The prep work was easy, and it didn’t take too long either!

My Findings:

This recipe is very filling! It calls for three chicken breasts, but since it was just the two of us eating, I only made two. Even after cutting out a chicken breast, we both will still have leftovers to take to work tomorrow-woohoo!

Turner’s Findings:

My humans discovered a few months ago that I love sweet potatoes (thanks Jenn and Aspen). Tonight, they bought me new food that has sweet potato in it. Italian? Nah… I was too distracted.

Smooch:

“The marinara sauce was a little bland… but I picked it out… so I guess that’s my fault.”

Sometimes it’s nice to take a break from the normal-everyday life and daydream a bit. Especially with a belly full of pasta. Where have you always wanted to go?

No Longer Cooking For Just Two

I apologize for the lack of updating. However, for the majority of September and October, I couldn’t stand the thought of cooking. In fact, the last thing I wanted was a healthy, home cooked meal. How ironic is that? A few weeks after starting a food blog, I lose my appetite. Turns out the first trimester of pregnancy will do that to you.

Yep, I am pregnant! We are so very excited, and the “eatting for two” offically started at the perfect time- the holidays.

This brings me to my next excuse for not posting in the months of November and December. While I was blissfully making my way into my second trimester and fully able to eat again, the holiday season was busier than ever. There still wasn’t much cooking happening in our house.

Now, months after my last post and 23 weeks happily pregnant- I am proud to announce that I am back in the kitchen and Turner is patiently waiting at my feet.

I thought I’d start by posting a healthy recipe. Partly because I can finally stomach vegetables and chicken again, and also in honor of all the people trying to start the new year off on the right foot.

My Findings: 

This meal is perfect for the cold nights we’ve been having lately. The warm spices mixed with the earthy vegetables makes the house smell wonderful. The recipe says to marinate over night- I didn’t have time, and it still came out great.

Turner’s Findings: 

I like and will eat up all carrots and potatoes that fall to the floor. I do not like brussel sprouts.

Smooch:

“Perfectly cooked and loved the seasonings. I wonder if we could make it work with boneless chicken breast instead.”

Featured Friday: Chicken Wraps By Jessica

I hardly ever cook on Friday. After a long week, we are typically going out to eat with friends, having a date night, or cleaning out the fridge by eatting leftovers.

But fear not!

I am blessed and lucky to have talented friends who also love cooking, and they are willing to share their recipes. Fridays will be reserved for Featured Fridays where I will share the blog posts that my friends have so graciously written for Turner and Smooch.

This week, meet Jessica. She was my college roommate, turned best friend, who was a dream to live with. She’s a true homemaker- crafty, clean, and a great cook! I’m sure you are going to enjoy her post as much as I did!

Chicken Lettuce Wraps- Two Ways:

Hey everyone, my name is Jessica Buck and I live with my handsome hubbz, Justin and the craziest, sweetest dog you could ever meet…besides Turner of course. 🙂 I am obsessed with your girl Meg Libowsky. She is the sweetest girl you could ever meet and I am so excited that she has started a blog. It gives me an additional network for yummy meals! She asked me to submit a guest blog recipe, this is what I got.This is one of Justin and I’s new favorite recipes. It is super easy to make, and you can make it many different ways. I will show you two different options that we have tried. But I’m sure you can put your own twist on it too!

The original recipe I found off of Pinterest…could you have guessed? They are Buffalo Chicken Lettuce Wraps. The chicken is baked and rolled in panko bread crumbs instead of your general bread crumbs. Panko is a Japanese-style breadcrumb traditionally used as a coating for deep-fried foods, and is made from bread without crusts. Panko’s crustless bread is coarsely ground into airy, large flakes that give fried foods a light, crunch coating. The flakes tend to stay crispier longer than standard breadcrumbs because they don’t absorb as much grease.

Ingredients:
1 1/2 pounds boneless skinless chicken breast, cut into bite-size pieces
1/2 cup buffalo sauce, plus a little more for drizzling over the finished chicken
2 cups panko bread crumbs
4-6 large soft leaves of lettuce (I use Romaine Leaves)
1/2 cup diced tomatoes
blue cheese or ranchers. dressing

Instructions:
1. Toss the chicken in the 1/2 cup buffalo sauce, cover and refrigerate for at least 30 minutes.
2. Preheat the oven to 375 and lightly grease a baking sheet or line it with parchment paper.
3. Pour the breadcrumbs into a shallow dish. Coat each chicken piece evenly and place them on the prepared baking sheet. The baking sheet will get pretty crowded – its okay.
4. Bake for 30 minutes.
5. To assemble the wraps, fill each leaf of lettuce with some chicken, tomatoes and your choice of dressing. These are also good as leftovers for lunch the next day!

My other version of this recipe is a Orange Chicken Lettuce Wrap. The hubbz and I love Panda Express, but do you ever wonder how fresh all of their food really is? And we are always so full and feeling overwhelmed when we leave there. This recipe brings this meal to a less filling item but still very delicious!

Additional/Different Ingredients:
1 cup cooked rice
1/2 cup Orange Chicken Sauce (we buy the Panda Express brand from the grocery store)

1. Marinate the chicken pieces in the Orange sauce for 30 minutes.
2. Get the rice going early, because it takes 20 minutes to cook. You can make this version even better by using brown rice instead of white rice.
3. Cover the chicken in breadcrumbs and bake for 30 minutes.
4. To assemble these wraps, spoon a layer of rice into the leaf of lettuce, top with chicken and drizzle with additional orange sauce.

Justin’s Opinion: You could use less buffalo sauce on the buffalo wraps (he’s kind of a sissy when it comes to hot/spicy foods). 🙂 He loves the orange chicken wraps…he saves about $10 enjoying the wrap at home rather than if he enjoyed a delicious yet filling meal from Panda.

Kyleigh’s Opinion: The panko bread crumbs are the best option for bread chicken! The give the extra crispiness that every dog enjoys! She could care less which one we make, as long as something is dropped every here and there.

Tuesdays are Long Days

Crockpot Dinners

Everyone has long days. Work, school, kids, workouts, pets, and for some of you superstars out there- all of the above.

Tuesdays are long days for me. Always. There seems to be a lot of days when I am being pulled in a million directions, and slowing down for a delicious home cooked meal doesn’t seem possible.

But it is.

I promise.

This crockpot meal is the solution!!

You may be thinking, Oh no, I don’t do crockpots. That requires time in the morning, and I don’t have a second to spare.

But you do for this recipe.

I promise.

Are you ready for this?

  1. Start brewing coffee
  2. Open crock pot.
  3. Drop in beef pot roast
  4. Pour in beef consommé
  5. Turn crockpot to low and close
  6. Continue to wait for coffee to finish brewing.
  7. Pour a cup of coffee in your mug and head to work.

End result: French Dip Sandwiches that are seriously delicious.

It is such an easy recipe that I almost didn’t share it with you. I thought, this is the perfect recipe to use to wow dinner guests! Now, the secret it out. If you ever find yourself at my dinner table, you will no longer be wowed. You will think, this is delicious, but I know how easy it was.
